Parmesan Spinach Tomato Frittata



You’ve got yourself a busy morning ahead and you need something delicious yet fulfilling and nutritious to feed your body and brains. How about some egg muffin frittatas eh? You can make these the night before and store them in zip lock bags. Remove in the morning, pop one in the microwave and voila! Eat and off you go on your beautiful day. Here goes:



2 cups egg whites

2 cups spinach ( chopped)

1 chopped roma tomato

2 tbsp garlic powder

1 chille chipotle powder

a few dashes of Mrs. Dash Lime Fiesta

a few dashes of dry parsley

1 tsp of baking powder

grated parmesan romano cheese

ground pepper


Avocado (slice half an avocado and place on the side)




HOW TO: (Very easy) 

1. Preheat oven to 350.

2. Place all ingredients in a bowl, minus the cheese. Whisk together then pour the batter into a 6 pan muffin tin. Fill each tin about half way.

3. Place in oven for about 15-20 minutes or until edges get golden. Grate some fresh parmesan cheese on top or even cheddar if you’d like.

4. Pair with avocado and salsa or toast for a full nutritious breakfast.
