One of the things I love about cooking is that there so many different ways and methods to have fun with food. It doesn’t always have to take hours and once you learn about certain vegetables, you can also play around with different methods as well. In this case, I learned that zucchinis don’t always have to be chopped and sauteed. You can turn it into pasta and ditch the heavy carbs and unhealthy ingredients in those linguinis.
*Side note: Some of my readers have emailed me about how having celiac disease has kept them from consuming any glutens which are typically found in wheats, barleys, and ryes. This dish is a great substitution for those of you who still want to have pasta in your life, but do not need the heaviness of carbs and gluten. I eat this over pasta in general because it also adds great nutritional value to my diet.
Depending on how big your family is, you can measure out how many zuchinnis you will need.
1. Take around 4 zuchinnis, chop off the hard end. Now take a peeler, grater or vegetable spiralizer and grate into thin, long pieces.
2. Gather zuchinni pasta into a microwave safe dish and cover with a glass lid. Place in microwave for about 2 minutes.
TIP: Please keep in mind that the natural water in the zuchinnis will make it soggy if it is overcooked so just keep your eye on it while it’s heating up in there.
3. Remove zuchinni from the microwave, drain excess water, and place it into a clean kitchen towel or even paper towel and squeeze it to get rid of more water. This will make your pasta nice and pasta-y. You know the kind where you can swirl your fork around?
4. You can simply drizzle some olive oil, crack some pepper in it with cheese on top. Or add your own sauce.
The cool thing about this simple, easy recipe is that you can use it as a base for so many dishes! Add whatever sauce you’d like on top, whatever meats or proteins and you have yourself a delicious meal.
