A delicious asian inspired dish for you to enjoy during lunch or dinner. Something about the combination of curry, cumin and soy sauce makes my mouth water. The best part about this dish has to be how quick and easy it is to make. It takes such little effort and can be done in no time! Well… you know what I mean!
Curry Chicken Stir Fry
3 oz chicken breast
12 sauteed onion
1 c broccoli
1/2 c brown rice
1/2 tsp cumin
1/2 tsp curry powder
1 tsp Trader Joe’s “Satay Peanut Sauce”
splash of soy sauce low sodium
1 tsp sesame oil
1. Heat pan on med-low heat. Add sesame oil. Cut onions and sautee them in the pan until they soften.
2. Add cooked brown rice. Then add prepped chicken strips and broccoli.
3. For seasonings, add cumin, curry powder, Satay Peanut Sauce, splash of low sodium soy sauce.
4. Stir evenly until warm.
5. Serve and enjoy.
*Tip: Prep your brown rice and chicken at the beginning of the week to save yourself some time. I also like this because I can easily adjust the flavors and seasonings according to whatever I am craving for that day. Remember, variety is key! All I do is combine everything together, add some flavorings, stir and I am done. No time to waste waiting around for the chicken and rice to cook. As you can see here, I was craving a hefty plate of asian stir fry so I used flavors like curry, cumin and soy.
