PUMPKIN PROTEIN MUFFIN
a high protein, low carb, sugar free recipe
.. not to mention it only takes 2 min to make. Really though
2 tbsp flaxseed meal
2 egg whites
1/2 tsp of baking powder
1/2 tbsp stevia
1 tsp cinnamon
1 tsp pumpkin spice
1 tbsp of Isopure Creamy Vanilla Protein Powder
2 tbsp pumpkin puree
1. In a small bowl, combine flaxseed meal, pumpkin spice, baking powder, stevia, cinnamon. Mix evenly.
2. Whisk in eggs and pumpkin puree. Spray a small mug or a muffin tin with non stick spray and pour batter in.
3. Microwave for 1:15 minute
4. Remove muffin from microwave ( let it cool down for about a minute)
Enjoy your quick fall treat. I usually like to eat this before working out on heavy lifting day. Fuels me with tons of energy to lift like a monster. =)
