Apple Cinna PB Pancakes

Oh how much I love rest day Sundays. It strange, I could be doing the same amount of work or house chores, or activities but no matter how much work I’m doing, it still feels relaxing just because it’s on a Sunday. Anyone else feel the same way or am I just a solo oddball?

I started this morning off with a calming stroll around my neighborhood. Then returned home to stack these low carb things up ….you already know the deal 😉

Apple Cinna PB Pancakes

 

Apple Cinna PB Pancakes

Recipe:
Dry
2 tbsp coconut flour
2 tbsp Isopure Vanilla Protein Powder ( or whatever you prefer)
1/4 tsp salt
1/4 tsp baking powder
2 tbsp stevia
1/2 tsp cinnamon
Wet
2 egg whites
3 tbsp unsweetened almond milk or coconut milk
1 tbsp water
Topppings
1/2 apple
1 tsp organic peanut butter
Preparation:
1. Preheat non stick skillet on med-hi
1. In a small bowl, sift coconut flour. Add protein powder, salt, baking powder, cinnamon and stevia.
    Mix evenly with fork.
2. In separate bowl, whisk egg whites, milk and water.
3. Combine ingredients and whisk with fork until ALL lumps are gone
4.  Spray skillet with non stick spray. Use a tbsp measurer to add batter onto pan. I used 2 tbsp
     for each pancake.
5. Wait about a  45 -60 sec then flip the pancake until the other side is cooked.
6. In the mean time, dice 1/2 an apple into a small bowl, add a dash of cinnamon.
    Place in microwave for a minute for it to soften.
7. Stack your pancakes and add the cinnamon apple topping
I always find the funnest part about eating a pancake is slowly running the fork down the stack.
