I’ve been having a strange attraction to coconut and bananas lately (if you can’t already tell with the previous Coco Banana Pancakes ) . There’s something about the combined sweetness of coconuts and banana that I cannot put my finger on. So another coco banana recipe? You betcha.
I started my morning off with a cold bowl of coconut banana chia pudding. The best part was waking up with it already waiting for me in the fridge.
Mmm … mmmm… and mmmmm. Another low carb recipe to suit your sweet tooth needs 🙂
2 tbsp chia seeds
2 tbsp canned coconut milk
1/2 c unsweetened almond milk
1/2 small banana
2 tbsp non fat greek yogurt
1 tbsp frozen shredded coconut meat
1. In a small bowl, mash the banana combine all ingredients.
2. Sprinkle of shredded coconut meat on top
3. Refrigerate overnight or for about 1 hour for the chia seeds to puff
(Those babies soak up a lot of liquid I tell ya)
4. If you like it thick, leave it as is. If you want it a little lighter, add more milk
until you’ve reached your desired texture
