I honestly can I say I will never have to go back to regular pancakes or even oat flour cakes again. I am OBSESSED with my cottage cheese pancakes. It makes me feel like I’m eating carbs but clearly here, I’m not. I love the light texture of the cottage cheese and the way it melts in my mouth every. tasty. bite. Can you tell I’m eating some right now?
Anyways, this morning I made the same pancakes except for toppings I used 1 tbsp of apple butter and 1 tbsp of sunflower seed butter. I am absolutely in heaven — and you can be too 😉
