Low Carb Pumpkin Protein Pancakes

At only 187 calories with only 9 g of carbs, 3 g of fat, and 30 g protein, we sure have ourselves a yummy guilt free breakfast.

Low Carb Pumpkin Protein Pancakes

                         I’m all about the fluffy, moist and sweet tasting pancakes. How about you?

Low Carb Pumpkin Protein Pancakes


1/2 tsp baking soda
1/4 tsp salt
1/4 tsp nutmeg
1/2 scoop creamy vanilla protein powder
1/4 tsp cinnamon
1/2 tsp stevia
1 tbsp flax seed meal
2 egg whites
1/4 c pure canned pumpkin puree
** 2 tbsp water! Important to make it firm!


2 tbsp cottage cheese
**1 tbsp walnuts optional    ** 232 calories, 10 g carb, 7 g fat, 31 g protein with topping


1. In a small bowl, combine all dry ingredients. Mix evenly with a fork
2. In another bowl, whisk together egg whites,pumpkin puree and water
3. Spray medium pan with non stick spray on med-hi heat
4. Use a tbsp measurer to put 2 dollops of the batter to make perfectly round pancakes
5. Let one side cook for about 30sec – 1 minute. Then flip to the other side
6. In a separate bowl, mix together cottage cheese and a dash of cinnamon
7. Once pancakes are finished, stack them, add cottage cheese topping with some walnuts
