Cucumber Chicken Salad
5.25 oz chicken breast
4/3 c cucumber or 8 slices
1/4 c tomato
2 TBSP feta cheese
1. Heat pan on med-hi, spray pan with olive oil spray or add 1 tsp of extra virgin olive oil
2. Add pre-cooked chicken breasts to warm it up, add tomato and feta
3. Add a squirt of lime and voila!
4. Lay sliced cucumbers on a plate and add the chicken mixture in the middle and voila! Simple isn’t it?
Who says eating clean and looking good had to be tough?!
