DARK CHOCO BANANA MUFFINS- Hooray for healthy treats!

ABSOLUTE PERFECTION! You WON’T believe how incredibly moist these muffins are!
Not to mention how much healthier they are compared to store bought
*Remember that eating clean and healthy does not mean giving up everything you love. It just means you need to work your way around things by making healthier alternatives for the sake of your long term health. If you’re craving muffins why not make them yourself?
This is one of my top popular recipes. And was requested by a reader, Cathy, from my previous blog, msfitique.com.

With that being said..
Dark Choco Banana Muffins
1/3 c unsweetened apple sauce
1/3 c fat free cottage cheese
1 ½ c wheat flour
2 tsp baking powder
½ tsp salt
½ c stevia
¼ c raisins
¼ dark chocolate chips
1. Preheat oven to 375
2. Mash bananas until you have a wet consistency. Add egg, applesauce, cottage cheese and whisk until evenly distributed.
3. In a separate dry bowl, combine wheat flour, baking powder, salt, stevia. Use a fork to separate any clumps while evenly mixing dry ingredients together.
4. Pour dry ingredients into wet ingredients and mix until you have a thicker texture. Add the raisins and dark chocolate chips. Use a spatula to fold the chocolate chips and raisins in until evenly distributed.
5. Spray muffin tin with any non stick spray . Use a spoon to distribute batter into tin. Place in oven for 18-20 minutes. If you’re not sure if its ready or not, insert a toothpick and by the old trick, the stick should come out clean. Do not leave your muffins in there for any longer than 20 minutes because they will dry.
My brother enjoyed these muffins just as much as I did! He’s going to pack these for school tomorrow. =) We gotta love killing two birds with one stone here, don’t we?
