Stuffed Baked Tuna Bell Pepper

You’ll see that all my recipes are simple ingredients (mostly under 5), simple preparation, and super time efficient!


Makes 2 servings:


1 green bell pepper
1/4 c black beans
1/2 brown rice
2 oz canned tuna
1/2 carrot stick chopped
minced garlic
mustard ( I love adding mustard to everything because it’s super tangy and tasty, 0 calories, and has great health benefits )
1 tbsp greek yogurt & organic salsa
Mrs. Dash: salt free garlic herb


1.Pre-heat oven to 350.

2.In a bowl, combine the black beans, cooked brown rice, tuna, carrots, and minced garlic. Add a dash of Mrs. Dash 😉

3.Cut the top lid of the bell pepper off and scrape the seeds out

4.Stuff the bell pepper to the very top until it heaps over, depending on how big your pepper is it might not fit but that’s fine to add to a salad or something for tomorrow =)

5.Place the bell pepper in the oven for about 25-30 minutes or until the texture of the bell pepper skin has softened a bit.

While it was sitting in the oven, I did a power heart pumping workout to make more use of my time.
